Cook portraits
The word cook seems to truly deliver the sense of the intended meaning of the word; one who cooks, the same applies to the word in Turkish. The French term cuisinier is derived from the word for kitchen and the oft-used term chef rather designates a sense of hierarchy. The cook however cooks for us, and that’s about it.
I’ve had the chance to meet 18 cooks at their various restaurants in 12 different cities in Turkey. Delightful people, who cook traditional Turkish cuisine in their own restaurants, working hard to preserve and continue the culinary traditions they have learned. I’d visit them mostly between 07.00 AM and 11.00 AM at the earlier hours, when the soup is ready to be served, simmering away on the stove and as the first customers start showing up.
I photographed them as they worked, as they rested, sometimes as they ate. They seemed tired but content, with smiles on their faces making me think that they had pride in their work.
The ever-increasing number of fast food joints and 24/7 food services mean that these cooks are in for fierce rivalry these days and unfortunately their numbers are in decline.
Aşçı portreleri
Aşçı kelimesi bana göre ondan beklenen anlamı çok doğru ifade ediyor, aş (yemek) yapan kişi. İngilizcede Cook pişirmek kökenli, Fransızcada Cuisinier mutfak kökenli, genelde kullanılan Chef ise çok hiyerarşik bir tanım. Aşçı ise bize yemek yapıyor, işi bundan ibaret.
Ben Türkiye’de 12 farklı şehirde 18 aşçıyı mekanında gördüm. Bunlar kendi dükkanlarında klasik türk yemekleri yapan, özveriyle gelenekleri sürdürmeye çalışan güzel insanlar. Genelde ziyaret saatlerim sabah 07.00 ile 11.00 arasındaydı, yani çorbanın kaynadığı ve ilk müşterilerin geldiği saatler.
Onları bazen çalışırken, bazen dinlenirken, bazen de karınlarını doyururken fotoğrafladım. Yorgundular, ama yüzleri gülüyordu; meslekleriyle gurur duyduklarını hissediyordum.
Günümüzde hızla yayılan fast food kültürü ve gün boyu hizmet veren restaurant zincirleriyle rekabette zorlanıyorlar. Aşçıların sayısı giderek azalıyor maalesef…
